Fall-Spiced Paleo Pancakes
Tis’ the season for some comfort food — breakfast, lunch or dinner you name it, I want it! Fall is one of my favorite seasons because of all the changes in fashion, food and of course it’s my birthday season! As a Chicagoan, finding love with the changing colder climates can be huge a challange. Which is why I love to get creative this time of year. Being in the kitchen captivates my creativity , total distraction from the colder weather. I’m a sucker for the warm comfort foods and everything pumpkin/fall spiced!! This fall, I decided to do some experimenting in the kitchen with personal chef @gmarketchef. This recipe is focused on a quick twist to your morning breakfast. We had so much fun, I wanted to share all the deliciousness with you.
Outside of being a model and actress, one of my hobbies is cooking. I love creating new recipes that are healthy, veggie/vegan forward, and quick. I mostly operate on a last minute schedule between castings, bookings, appointments and such. So this recipe fit the bill.
I went to Costco the other day and found a paleo pancake mix. I don’t eat pancakes regularly because they really have no health benefits. But Birch Benders paleo mix was everything I was looking for to get my quick healthy comfort fix! The one ingredient that made my purchase decision was that it’s made with cassava flour. So it’s totally gluten free! The more products I can find without wheat the better! This Fall Spiced Paleo Pancake recipe has 7 ingredients — 4 being optional. If your looking for a healthy alternative to breakfast on the go, this is it! You can buy these ingredients at your local grocery store. I prefer whole foods and trader joes.
Fall-Spiced Paleo Pancake Recipe
Paleo Pancakes
1 ½ Cups Birch’s Paleo Mix
1 ⅓ Cups Water
1 tsp Pumpkin Spice
1 T Olive Oil
With a whisk in a medium bowl whisk together the paleo mix and water. Let sit for 10 mins so the mixture can thicken. Heat a medium sized saucepan on medium-high flame. Add the olive oil and with a teaspoon test the heat of the pan. If the olive oil starts to bubble rapidly around the edge of the batter the pan is ready. With a two ounce ladle scoop the batter into the center of the pan using the ladle to spread the batter in the pan using a circular motion. Once the batter begins to bubble and dries up on the top the pancakes are ready to be flipped. Flip the pancakes count to 30 and they are done!!!
